Chef Yip, Mr. Yip Wing Wah, Hong Kong pastry chef, has over 50 years of experience in the catering industry. In 1986, he joined the Spring Moon of The Peninsula Hong Kong. He has been the Master Chef of the Dim Sum Department for more than 30 years. He is the founder of the famous Peninsula “Egg Custard Mooncake” and is known as the leader of the Hong Kong moon cake industry.
In 2024, Chef Yip invented the first “Low Sugar Lava Custard Mooncake,” sparking a hot topic about lava custard mooncakes.
Michelin Two-star Master
Chef Lai Wing Koon
Michelin two-star pastry chef, Master Lai Wing Koon, also joined the Imperial Patisserie team in 2019. He is Chef Yip Wing Wah’s only official apprentice. For more than ten years, he served as the head chef of the Shanghai Peninsula Hotel Dim Sum Department, and founded the Shanghai Peninsula Hotel Dim Sum Department.
Chef Lai likes to study the ingredients and do research and development according to the characteristics of the ingredients, which brings surprise effects.Combining the characteristics of ingredients and Cake and Pastry’s techniques, Chef Lai has developed a variety of flavored Lava mooncakes with Chef Yip.

Monde Selection, is one of the world most authoritative and representative food award since 1961. Every year, more than 80 experts gather to evaluate and have a tasting of the food products from all over the world.
With the unique craftsmanship, our two Master Chefs have garnered the “Grand Gold Award” from Monde Selection for 6 consecutive years and our Lava Mooncake is the first in receiving this award in Hong Kong.

Imperial Patisserie’s food manufacturing facility in Hong Kong is constructed according to Good Manufacturing Practice (GMP) standards, covering an area of over 70,000 square feet. It has been awarded the latest international standard food safety system certification ISO 22000:2018 and HACCP management system certification, as well as Halal certification. Riding on the preceding success, we have created the Mooncake Gift Box with delicate paper art, featuring unique leather texture and embroidered lines on the box.
This year, we continues to introduce mooncake boxes in new color schemes, bringing a fresh visual experience to surprise customers. The double-layered square box from the classic series has always given a sense of luxury and elegance, making it an ideal choice for gift-giving. This year, we’ve added an elegant ruby red to the collection.
For the fancy series’ double-layered rectangular box, in addition to the colorful celadon green, there are also elegant and fashionable baby pink and sky blue options. This year, we’ve added another creative touch with a new color to the fashion series – a vibrant and eye-catching lime green.
Exceptional Craftmanship
The Lava Mooncake involves a high level of craftsmanship and technology. If the lava is too thin, it will be absorbed by other fillings. If it is too thick, it will condense and affect the lava flowing effect. With over a hundred times of testing, the two Master Chefs have successfully created the best lava effect under room temperature.
Lava mooncakes have undergone hundreds of repeated research and improvement, so that they have the Lava effect even under room temperature and we have created an array of different colors and flavors.
